Crazy Month

I made thes sweet cards back in June. I am only getting around to posting them. I love those cute little dolls from Hero Arts! They rock.
This month has been just this side of insane!! And, unfortunately I did very little creating this month. Too many other things to be done. DH had vacation the first week, then I had 2 weeks off (first time ever that I got vacation in the summer). We ripped up a carpet and put peel and stick tile down, then we painted two rooms. I took the kids to the Valley a couple of times, once to visit a girlfriend, and once to go to the zoo. The weather was GORGEOUS - other than hurricane Bill, who blew in last week. Now Danny is on his way.
I did make some cards last night with my cricut, so when I take pics, I will post them. I have a swap due in the next 2 weeks, which is done, but not yet mailed, and 2 more due in the next month and a half, so I really need to get creating!
In very sad news, we had to put down our 14 year old kitty yesterday. She was blind (who knew??) had high blood pressure, arthritis, diabetes, probable kidney problems and most likely a brain tumor. It was devastating - especially for the kids. DS is very sad, and DD said to me "Don't worry mummy, we'll see her again in heaven" - she's 3. DH and I are talking about getting another cat. I would love to get a sibling pair, so they could keep each other company - haven't mentioned taht to DH yet...
a la prochaine...

Peaches under meringue, my version!

This is the Gourmet/ Epicurious recipe..I sort of followed.
Peaches under Meringue:
2 ripe peaches, halved and pitted
3 tablespoons plus 1 teaspoon sugar, divided (seems like a lot of sugar to me)
1 large egg white
2 tablespoons finely chopped sesame candy or crushed amaretti (?)
Preheat broiler.
Put peaches, cut side up, on a baking sheet and sprinkle with 1 teaspoon sugar (total). Broil 4 to 5 inches from heat until tops begin to brown, 2 to 4 minutes.
Beat egg white with a pinch of salt in a deep bowl using an electric mixer at medium-high speed until foamy. Gradually add remaining 3 tablespoon sugar, beating until white holds stiff, glossy peaks. Fold in sesame candy.
Place a dollop of meringue on each peach half and broil 30 seconds. Turn off broiler and leave peaches in oven just until tips of meringue are browned, 30 seconds to 1 minute (watch carefully).
Meringue in this recipe is not fully cooked........?

I did not have either the sesame candy or the amaretti , did have the peaches and egg white.
Never one to be defeated by a little issue, thought what could I use instead? Ground almonds? Amaretto?
Settled on Amaretto liquor.
Cut peaches in half, did not broil them first.
Lightly sprinkled cut peaches with 1 tsp Amaretto liquor each half, whipped the egg white with only 2 tsp white sugar and 1 tsp. amaretto liquor.
Have to watch those calories...
Baked at 350 for 10 minutes, weren't browned enough for me added 2 more minutes........which cooked the meringue totally ;making the pretty brown tips , the peaches were still firm yet cooked; there was some pinky coloured drippings from the liquor and peach juice that pooled at the bottom of the baking pan ...used that juice on the dessert plate then placed peach on top......
Verdict;Delicious!

Julie and Julia

Since I am working this weekend I am staying at my Mom's . We decided to go see Julie and Julia, had heard rave reviews from friends........

This is a cute, interesting and funny movie........... light summer fare. Laughs were plenty.Anyone who blogs will get a few chuckles from this movie...Meryl Streep is spot on with her take on Julia Child.
I now want to make Julia Child's Beef Bourguignon, here is the recipe and once the weather cools this fall will be step by step making this recipe.
Recipe:
1 6 ounce piece chunk bacon
31/2 tablespoons olive oil
3 pounds lean stew beef, cut into 2-inch cubes
1 carrot, sliced
1 onion, sliced
Salt and pepper
2 tablespoons flour
3 cups red wine, young and full bodied
3 cups beef stock
1 tablespoon tomato paste
2 cloves mashed garlic
1/2 teaspoon thyme
1 bay leaf, crumbled
20 small white onions
31/2 tablespoons butter
herb bouquet (4 parsley sprigs, one-half bay leaf, one-quarter teaspoon thyme, tied in cheesecloth)
1 pound fresh mushrooms, quartered
1 Preheat oven to 450 degrees.
2 Remove bacon rind and cut into lardons (sticks 1/4-inch thick and 1 1/2 inches long). Simmer rind and lardons for 10 minutes in 1 1/2 quarts water. Drain and dry.
3 Sauté lardons in 1 tablespoon of the olive oil in a flameproof casserole over moderate heat for 2 to 3 minutes to brown lightly. Remove to side dish with a slotted spoon.
4 Heat fat in casserole until almost smoking. Dry beef in paper towels; it will not brown if it is damp. Add beef, a few pieces at a time, and sauté until nicely browned on all sides. Add it to the lardons. In the same fat, brown the sliced vegetables. Pour out the excess fat.
5 Return the beef and bacon to the casserole and toss with 1/2 teaspoon salt and 1/4 teaspoon pepper. Then sprinkle on the flour and toss again to coat the beef lightly. Set casserole uncovered in middle position of preheated oven for 4 minutes. Toss the meat again and return to oven for 4 minutes (this browns the flour and coves the meat with a light crust). Remove casserole and turn oven down to 325 degrees.
6 Stir in wine and 2 to 3 cups stock, just enough so that the meat is barely covered. Add the tomato paste, garlic, herbs and bacon rind. Bring to a simmer on top of the stove. Cover casserole and set in lower third of oven. Regulate heat so that liquid simmers very slowly for 3 to 4 hours. The meat is done when a fork pierces it easily.
7 While the beef is cooking, prepare the onions and mushrooms. Heat 1 1/2 tablespoons butter with one and one-half tablespoons of the oil until bubbling in a skillet. Add onions and sauté over moderate heat for about 10 minutes, rolling them so they will brown as evenly as possible. Be careful not to break their skins. You cannot expect them to brown uniformly. Add 1/2 cup of the stock, salt and pepper to taste and the herb bouquet. Cover and simmer slowly for 40 to 50 minutes until the onions are perfectly tender but hold their shape, and the liquid has evaporated. Remove herb bouquet and set onions aside.
8 Wipe out skillet and heat remaining oil and butter over high heat. As soon as you see butter has begun to subside, indicating it is hot enough, add mushrooms. Toss and shake pan for 4 to 5 minutes. As soon as they have begun to brown lightly, remove from heat. When the meat is tender, pour the contents of the casserole into a sieve set over a saucepan.
9 Wash out the casserole and return the beef and lardons to it. Distribute the cooked onions and mushrooms on top. Skim fat off sauce in saucepan. Simmer sauce for 1-2 minutes, skimming off additional fat as it rises. You should have about 2 1/2 cups of sauce thick enough to coat a spoon lightly. If too thin, boil it down rapidly. If too thick, mix in a few tablespoons stock. Taste carefully for seasoning.
10 Pour sauce over meat and vegetables. Cover and simmer 2 to 3 minutes, basting the meat and vegetables with the sauce several times. Serve in casserole, or arrange stew on a platter surrounded with potatoes, noodles or rice, and decorated with parsley.
One note both Julia Child and her husband lived into their 90's;
all that butter and rich French cooking wasn't that bad!

Mother was right?

My Mom sent me an email about water filled bags keeping flies away. They are used on patios and by doorways filled with water and 4 pennies....from Florida to Texas.
Sceptic me thought no way....another Internet myth or old wives tale.Checked it out on Snopes and Google....Seems there might be something to this.Still Mothers are wise and always right. We all know this from our experience. For, we have all grown up on the wisdom's and advice of our moms.
So........
We have a door from the garage into the house that flies cluster around getting into my house.
I hate flies!
My bag of water without pennies has been up for 5 days and so far in a most unscientific test I would say it works, only 1 fly has gotten in .............
Mothers are always right!

Roasted Kale tastes like potato chips?

This year I am growing kale for the first time ,4 very healthy plants , they are huge.......Do I know what to do with this veggie?
That is a big NO!
Reading Oklahoma Kitty's blog she mentioned Cheryl's roasted kale....... Had to try it.
Well washed the Kale , thick stalks cut off and leaves torn into bite size pieces.

After roasting;

Healthy it is.........Kale is high in Vitamins A,C and K, good source of manganese , calcium and iron, fiber and protein..It is tougher than chard and spinach and that is why it is used mostly in soups.
If you want to try it
3 -4 cups firmly packed kale
1 TBSP. olive oil
1 tsp. sea salt
Heat oven to 375 Wash, trim kale, strip leaves off stocks.tear into bite sized pieces. Drizzle with olive oil and salt. Roast 5 minutes , turn over, roast another 7-10 minutes until kale is brown and crisp. . It becomes paper thin.. Serve immediately.
This serves 2, 186 calories 14 grams of fat...
Did they taste like potato chips?
No, but they were good , crisp and salty , think they would go well with a beer..... certainly somewhat healthier than potato chips........... okay ,maybe not..

Drying Hydrangea

The heavily laden Limelight hydrangea bush needed to be pruned, several of the branches laying on the ground .Since I love the look of dried hydrangea floral arrangements that are so expensive to buy . A brain wave ! Dry my own!
Here are the blossoms.

Some fully open which directions for drying say pick when just open.

Some with a few tiny blossoms yet to unfurl, which type of stem will dry the best?
When researching drying techniques 3 were to most used, air drying hanging stems upside down ,inserting stems in glycerin mixture or and the one I am using, clean leaves off stem leaving stems 12 -18 inches long insert into a vase with 1 inch of water letting the water evaporate , add no more water and let the flowers will slowly dry......

We have had rain, rain, and more rain so hoping this does not effect the drying process.
Will let you know if this succeeds........

where ya been?

One rather sharp regular reader to my blog noticed my shorter than usual posts..... you know who you are ..............Patsi!

So why is that?

Retirement keeping me so busy?
Gallivanting with the Red Hats?
My many hobbies?
Vacation from vacation?
Gardening?
Nope none of those , can you guess?
Here is a clue.

Yes you are right I have been working again...........as a casual, only due to circumstances ( one full time off with illness and one let go) I am working more than I expected......full time!
I had agreed to working as a casual when I retired and for the first 10 months heard nothing then this June some requests for my services came at first rather slowly then before I knew it August is a full month........
Am I liking it?
Yes, it is great to see everyone again, catch up on all the news.. the social aspect ...I am much more relaxed , " Hey, I am just a casual" .... the bank account is loving this mad money........... Hummmmmmmmm, more card making supplies in my future....... a few speciality plants for the garden ........ finding some new touches for the house........... always something the money can come in handy for.......... weekend shopping trip............the list is endless...........of course.
I appreicate my freedom from the day to day grind all the more for this little spurt of work.....
